Collards are cold-hardy, green, and nutritious; similar in appearance to cabbage leaves. Think kale, but better-tasting. Champion is a Vates-type collard with waxy leaves not favoured by cabbage worms — hoorah! Plants are large (up to 3′ tall) and don’t bolt easily. Collards hold well on the plant or in the fridge. Harvest young leaves for stir-fries or mature leaves for steaming or boiling.
